OLD-FASHIONED SNOWBALL CAKE
Ingredients:
For the Cake:
10-inch angel food cake
4 cups of Cool Whip
20-ounce can of crushed pineapple in syrup
2 packets of gelatin (0.25 ounces each)
4 tablespoons cold water
2 tablespoons of lemon juice
1 cup white sugar
1 cup of boiling water
For the Frosting:
2 cups of Cool Whip
8-10 ounces of flaked sweetened coconut
Maraschino cherries
Directions:
Begin by slicing the angel food cake into three equal horizontal layers.
In a small bowl, mix gelatin with cold water and let it sit for 5 minutes. Then add boiling water and stir until the gelatin completely dissolves.
In a large bowl, combine the gelatin mixture with sugar, lemon juice, and crushed pineapple (with syrup). Fold in 4 cups of Cool Whip.
Spread a portion of this mixture between each layer of the cake and over the top and sides.
Refrigerate the cake for at least 4 hours, allowing the gelatin to set.
Once set, frost the cake with the remaining 2 cups of Cool Whip and press the coconut flakes all over the cake.
Garnish with maraschino cherries before serving.
